Data for "Socioeconomic Status and Judicial Disparities in England and Wales, 1870-1910" are available from
openICPSR for 1870, 1883, and 1910 (in Stata format). The data come from the Calendar of Prisoners for England and Wales. I made the original transcriptions from photographs taken in the National Archives. The 1870 and 1910 data contain Assizes and Quarter Sessions; the 1883 data also include transcriptions from the Central Criminal Court (Old Bailey), as well as more detail such as the amount stolen and the identity of victims.
"Economic Development and the Demographics of Criminals in Victorian England" additionally uses data from the Proceedings of the Old Bailey website. Contact them for the transcripts, which are tagged xml files.
